3/4 cup margarine
1/2 cup agave or honey
2 egg replacers
1 tsp. vanilla
2 cups oat flour
2 tsp. baking powder
1/2 tsp. salt
1 1/2 cups grated carrots

Mix the margarine and agave. Add egg replacers and beat well. Blend in vanilla. In a medium bowl, combine flour, baking powder, and salt. Add dry ingredients to wet ingredients and mix well. Stir in the carrots. Dry by teaspoonful onto baking stone. Bake at 375 for 12-15 minutes.

These cookies are a great first cookie for your baby. If your baby can tolerate carrots, a fruit puree, and oats, these are perfect. I used EnerG eggs for mine but bananas or applesauce would work perfect as well. I also used agave for mine since you aren't supposed to give a baby honey under 1 year of age.
