Coconut Candy

1 can (14 oz.) coconut milk
3 cups sugar

In a large saucepan, combine coconut milk and sugar.  Cook over medium-high heat, stirring frequently, until it is beginning to turn a caramel color.  If using a candy thermometer, try to get to at least 275 degrees.  Once it is a caramel color, pour onto sprayed cookie sheet and allow to cool.  Break into pieces and serve.

    This is virtually coconut flavored sugar bars but they are so good. I took them to my friend's LOST series finale party and they were a hit.
