1 cup margarine
1 cup brown sugar
1 cup sugar
1/2 cup applesauce
1 tsp. vanilla
2 1/4 flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
2 cups oats
1 cup chocolate chips
1/2 cup dried fruit (cherries, cranberries, raisins)
1/4 cup coconut
1 cup brown sugar

In a large bowl, cream together margarine and sugars. Add applesauce and vanilla and mix well. In a separate medium bowl, combine flour, baking soda, baking powder, and salt. Add flour mixture to margarine mixture. Stir in oats, chocolate chips, dried fruit, and coconut. Use an icecream scoop to put heaping (3-4 tbsp.) dough balls onto baking stone. Bake at 350 for 17-19 minutes or until just light brown on edges. Cool on baking stone, then transfer to wire racks. Makes about 3 dozen giant cookies.

These are really good. My husband and good friend both loved them. There are also not any "weird" ingredients in them so you can have a friend make them without feeling bad about making them buy extra stuff. Just make sure they get Fleischmann's Unsalted margarine!
