2 cups peaches, peeled and sliced (about 2 large)
1 1/2 cups sugar, divided
1/2 cup margarine, melted
1 cup flour or flour substitute
2 tsp. baking powder
1/4 tsp. salt
dash nutmeg
3/4 cup rice milk

In a bowl, combine peaches and 3/4 cup of the sugar; set aside. Pour margarine into an 8x8 or 11x7 baking pan. In a bowl, combine flour, baking powder, salt, nutmeg, and remaining sugar. Stir in rice milk until just combined. Pour over the margarine. Pour peaches on top. Bake at 375 for 40-45 minutes or until golden brown.

This was phenomenal. My husband, not usually a sweets eater, went back for seconds. It seems weird to put the peaches on top but the cobbler part grows and surrounds the fruit so they end up being on the bottom. I made this with whole wheat white flour. I didn't have nutmeg so I used apple pie spice which was great.
