2 cups vegetable stock
1 cup rice
1 cup snow peas, halved
1 cup bell pepper, diced
3-4 ribs celery, sliced
4 green onions, sliced
8 oz. can water chestnuts, drained
11 oz. can mandarin oranges, drained
8 oz. can crushed pineapple, drained
2 tsp. orange juice concentrate
2 tsp. honey
1 tsp. "soy" sauce
2 tsp. olive oil
1/2 tsp. lemon juice
1/2 tsp. garlic, minced
1/4 tsp. fresh ginger, minced
1 cup rice

Cook rice in stock; set aside to cool. Put rice in a large mixing bowl. Add all the vegetables. In a small bowl, whisk together orange juice, honey, "soy" sauce, olive oil, lemon juice, garlic, and ginger. Pour over warm rice and toss. Chill 4-8 hours and toss again before serving.

This was very good. The best part about it is you can just add whatever veggies you have on hand and leave out the ones you don't have or don't like.
