2 sweet potatoes

Peel sweet potatoes and cut into fries. Put in boiling water for 4 minutes. Drain immediately and dry on a wire rack until cool. Heat 1" of oil in a large skillet. Add sweet potato fries in batches and fry until golden brown. Drain on paper towels. Salt to taste.

These were much crispier than oven-baking but a little more time-consuming.
