2 cups flour
2 tsp. baking powder
1/4 tsp. salt
1 tbsp. instant espresso powder
1/2 cup sugar
1/4 cup brown sugar
1 1/4 cup mashed bananas (about 3)
1/4 cup vegetable oil
1/2 cup buttermilk substitute
1 tsp. vanilla
1 cup chocolate chips
2 tsp. baking powder
1/4 tsp. salt

In a large bowl, combine flour, baking powder, salt, espresso, sugar, and brown sugar. In a medium bowl, combine bananas, vegetable oil, buttermilk substitute, and vanilla. Stir wet ingredients into dry ingredients only until no streaks of flour remain. Stir in chocolate chips. Pour into sprayed 8x4 loaf pan. Bake at 350 for 55-65 minutes or until a toothpick comes out clean.

Can you say yum!? This was so good. The coffee really brought out the flavor of the chocolate. I used mini chocolate chips from our bulk section. I also used whole wheat white flour and oat flour. Loved this.
