Zucchini Muffins

2 cups flour
2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/4 tsp. nutmeg
1/2 cup sugar
6 tbsp. applesauce
1 1/4 cups zucchini, shredded
1 1/4 cups rice milk

In a large mixing bowl, combine flour, baking powder, baking soda, salt, nutmeg, and sugar.  In a medium bowl, combine applesauce, zucchini, and rice milk.  Stir wet ingredients into dry ingredients.  Spoon into 12 sprayed muffin cups.  Bake at 400 for about 20 minutes or until a toothpick comes out clean.

    These were good fresh out of the oven. The flavor was very tame so good for little ones. I like a sweeter muffin but my husband liked them lots!
