Zucchini Fried Cakes

4 EnerG eggs + water, whipped until frothy
4 cups zucchini, packed and shredded
1/2 cup red onion, finely minced
1/2 tsp. salt
1 tsp. garlic powder
1/3 cup flour or flour substitute
oil for frying

In a medium bowl, combine egg replacers, zucchini, red onion, salt, garlic powder, and flour.  Heat 1/4" oil in a large skillet.  Once very hot, add spoonfuls of batter and press down.  Fry on each side until golden brown.  Drain grease on a paper towel and serve while hot and crisp.
