Chicken Fried Rice
1/4 cup vegetable oil
5 cloves garlic, finely chopped
1 anaheim pepper, diced
1 lb. chicken breast, diced
3-4 cups cooked jasmine rice, chilled
1 1/2 tbsp. white sugar
2 tbsp. fish sauce
2 tbsp. "soy" sauce
1/2 tsp. salt
1 chopped green onion
2 tbsp. fresh basil leaves, chiffanade (optional)
2 tbsp. cilantro, chopped (optional)
Heat oil in a large skillet over medium-high heat. Fry the garlic until golden, then add the pepper and chicken meat; stir-fry until cooked through. Add rice, sugar, fish sauce, "soy" sauce, and salt. Fold together gently. Once blended, add the green onion, basil, and cilantro. Cook for 1 more minute, then serve hot.
