Chocolate Cupcakes
1/4 cup oil
3/4 cup sugar
1/4 cup non-dairy yogurt
1/4 cup applesauce
1 tsp. vanilla
1/4 tsp. salt
1/4 tsp. cinnamon (optional)
1 tsp. baking soda
2/3 cup rice milk
2 tbsp. lemon juice
1/3 cup cocoa powder
1 cup flour
1/2 cup chocolate chips
Beat oil, sugar, yogurt, and applesauce with an electric mixer until smooth.  Beat in vanilla, salt, and baking soda until well blended.  Add rice milk and lemon juice and beat well.  Beat in cocoa powder, then flour, beating 3 minutes after last addition.  Stir in chocolate chips.  Divide between 12 cupcakes.  Bake at 350 for 25 minutes or until a toothpick comes out clean.  Cool on rack.  Frost as desired.
