Corn Dog Muffins
1 1/4 cups flour or flour substitute
3/4 cup corn meal
1/4 cup sugar or honey
2 tsp. baking powder
1/2 tsp. salt
1 cup rice milk
1/4 cup oil
1 egg
5 hot dogs, cut into fifths
Combine flour, corn meal, baking powder, salt (and sugar if using).  Stir in rice milk, oil, egg, (and honey if using).  Stir just until all ingredients are moistened.  Meanwhile, put one hot dog piece in each of 24 greased mini muffin cups.  Pour batter over each hot dog.  (If you have extra batter as I always do, pour into 6 full-size muffin cups for some muffins.)  Bake at 375 for 12-16 minutes or until toothpick comes out clean.
