Cranberry Oat Muffins
1 1/2 cups flour
1 tsp. baking soda
2 tsp. baking powder
1/4 tsp. salt
1/2 tsp. ginger
1 cup quick oats
1 cup dried cranberries
1 cup buttermilk substitute
1/2 cup oil
1/2 cup sugar
Mix together flour, baking soda, baking powder, salt, and ginger into a large bowl.  Stir in oats and cranberries.  In a separate medium bowl, mix together buttermilk substitute, oil, and sugar.  Add to dry mixture and just barely stir together.  Pour into 12 lightly sprayed muffin tins and bake at 375 for 18-20 minutes or until toothpick comes out clean.
