Date Bars
For Crust:
1/2 cup margarine, softened
1 cup brown sugar
1 1/2 cups flour or flour substitute
1/2 tsp. baking soda
1/2 tsp. salt
1 cup oats
1 tbsp. water

For Filling:
1 3/4 cups dates, chopped and pitted
1/2 cup raisins
1 1/4 cups water
1/4 cup orange juice
For the filling: In a medium saucepan, combine dates, raisins, water, and orange juice. Bring to a boil; reduce heat. Simmer, covered, for 8-10 minutes or until thickened. Set aside to cool slightly.

For the crust: Meanwhile, in a lage mixing bowl, beat the margarine for 30 seconds. Add the brown sugar and beat until combined. Beat in the flour, baking soda, and salt until crumbly. Stir in the oats and water until combined.

Press half of the crust mixture into the bottom of a 9x13 pan. Spread the filling evenly over the crust. Sprinkle remaining crumb mixture evenly on top. Bake at 350 for 35 minutes. Cool before cutting.
