Double Chocolate Chip Muffins
1 1/2 cups rice milk
1/3 cup oil
2 tbsp. water
1 1/4 tsp. vanilla
2 cups flour
2/3 cup cocoa powder
1/2 cup sugar
2 tsp. baking soda
1/4 tsp. salt
1/2 to 3/4 cup chocolate chips
In a medium bowl, combine rice milk, oil, water, and vanilla.  In a large bowl, combine flour, cocoa powder, sugar, baking soda, and salt.  Add wet mixture in dry mixture until just combined.  Stir in 1/2 cup chocolate chips.  Divide muffin batter evenly into 12 greased muffin cups.  Sprinkle additional chocolate chips on top if desired.  Bake at 400 for 14-17 minutes or until toothpick comes out clean.
