Egg Foo Young
3 eggs
1/2 cup onions, diced
1/2 cup diced roast pork, chicken, or turkey
1 cup water
1/2 cup + 1 tbsp. vegetable oil
1 tsp. sugar
1 tsp. "soy" sauce
1 tsp. MSG
dash of pepper
2 tsp. corn starch
3 tbsp. water
To make eggs: Mix onion and meat. Beat eggs and stir into meat and onions. Heat oil in large skillet. Pour egg mixture into hot oil using about 2 tbsp. per patty. Brown for 2 minutes. Flip patty over and brown another minute. Place on plate with paper towels to absorb oil. Repeat until mixture is gone.

To make gravy: Bring 1 tbsp. oil, water, sugar, "soy" sauce, MSG, and pepper in a small saucepan to a boil. In a small bowl, dissolve corn starch in a little water. Stir liquid in pan while pouring in cornstarch mixture. Stir occasionally until gravy is desired consistency.

Pour gravy over eggs and serve with rice.
