Egg-Free Meatloaf
1 lb. ground meat
8 oz. can tomato sauce, divided
1 small onion, minced
1 sleeve saltines, crushed
1 flax "egg"
1/2 tsp. tenderizer
1/4 cup brown sugar
1/4 tsp. mustard powder
2 tbsp. vinegar
Mix meat, 6 oz. of the tomato sauce, onion, saltines, flax "egg", and tenderizer. Form into loaf in 9x9 pan with higher sides leaving room on each side. Mix remaining ingredients (brown sugar, vinegar, mustard, and 2 oz. tomato sauce) in a small bowl. Pour on top of meatloaf in crevasse. Add 1/8 cup water to each side of meatloaf and bake at 350 for 1 hour.
