Energy Balls
1 cup oats
2/3 cup coconut flakes
1/2 cup sunbutter, peanut butter, or other nut butter
1/2 cup ground flax seed
1/2 cup chocolate chips
1/3 cup honey
1 tbsp. chia seeds (optional)
1 tsp. vanilla
Stir all ingredients together until thoroughly mixed.  Cover and let chill in the refrigerator for 30 minutes.  Once chilled, roll into walnut-sized balls.  Keep refrigerated.  Makes about 2 dozen.
