Grain-Free Pizza Crust
1 cup tapioca flour/starch
1/3 cup + 2-3 tbsp. coconut flour, separated
1 tsp. salt
1/2 cup olive oil
1/2 cup warm water
1 egg
Combine dry ingredients.  Pour in oil and warm water and stir.  Add egg and continue mixing until well combined.  Add 2-3 more tablespoons coconut flour a tablespoon at a time until the mixture is a soft but somewhat sticky dough.  Turn out dough onto a surface sprinkled with tapioca flour and gently knead until it is in a manageable ball that does not stick to your hands.  Place the dough ball onto a sheet of parchment paper.  Use a tapioca floured rolling pin to carefully roll out the dough until it is fairly thin.  Place the parchment paper on a baking sheet or baking stone and bake at 450 degrees for 12-14 minutes or until desired doneness.  Add toppings to pizza and bake at 350 until toppings are heated through.
