Hamburger Curry
2 lbs. ground meat
2 tsp. salt
1/2 tsp. pepper
2 tbsp. curry powder
4 large carrots
1 large onion
2 large potatoes
1 medium bell pepper OR 2 ribs celery
2 cups rice milk
1/2 cup flour or flour substitute
In a large pot, brown meat and drain. Add 4-5 cups water, depending on how much liquid you'd like (shown here with 5 cups). Add salt, pepper, and curry powder. Add carrots, onion, bell pepper/celery, and potatoes; cook for 15 minutes. Combine milk and flour with a whisk. Add to curry mixture. Lower heat and cook until thickened, about 10 minutes.
