Hawaiian Pulled Pork
3-4 lb. pork shoulder
1 tbsp. paprika
1/2 tsp. pepper
1/2 tsp. salt
1/2 cup chicken broth
1/2 cup brown sugar
1/4 cup "soy" sauce
1 cup chili sauce
6 oz. pineapple juice (or juice from 20 oz. can of sliced pineapples)
1 onion, roughly chopped
2 carrots, roughly sliced
2 tbsp. vegetable oil
1 tbsp. ginger, chopped
4 cloves garlic, minced
Place onion and carrots in slow cooker as a bed for your pork. In a small bowl, combine salt, pepper, and paprika. Rub on pork and place in slow cooker.

In a bowl, whisk together the chicken broth, brown sugar, "soy" sauce, chili sauce, and pineapple juice. Pour half of the mixture over the pork; reserve remainder. Cover and cook on low 7-8 hours.

During last half hour of cooking, in a small skillet, heat oil over medium heat. Saute garlic and ginger about 2 minutes. Add reserved juice mixture, bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and set aside.

Remove pork from slow cooker and shred. Serve generously drizzled with Hawaiian sauce.
