Honey Cloud Pancakes
2 eggs and 2 egg whites
1/2 cup warmed rice milk
1/2 cup flour or flour substitute
1/4 tsp. salt
2 tbsp. honey
1 tsp. vanilla
2 tbsp. butter, coconut oil, or margarine
soft fruits or berries
Heat the oven to 400.  Put a 10" skillet into the oven to heat.  In one bowl, mix egg whites until white and peaky.  In another bowl, mix the whole eggs with flour, salt, honey ,and vanilla, then whisk in the warm milk.  Gently fold the egg whites into the batter.  Melt butter in the hot pan.  Pour the batter in and arrange fruit on top.  Bake in the oven for 10-12 minutes or until set up.  Drizzle with honey and serve.
