Hoppin' John New Years Peas
3/4 cup onion, chopped
3/4 cup celery, chopped
2 cloves garlic, minced
2 tsp. oil
2 cans (15 oz.) black eyed peas, drained and rinsed
3 to 3 1/2 cups chicken broth
1/2 lb. cooked ham, cubed
1 bay leaf
cooked rice
Heat the oil in a large pot and saute the onions, celery, and garlic until tender, about 3-5 minutes.  Add peas, chicken broth, ham, and bay leaf.  Boil for 3 minutes, then reduce heat to low.  Cover and simmer about 20-30 minutes, stirring occasionally.  Add more broth if needed.  Remove bay leaf and serve over cooked rice.  Season with salt and pepper to suit your taste.
