Morning Glory Muffins
1/2 cup oil
1/2 cup rice milk
2 1/2 tsp. vanilla
2 tbsp. water
2 cups flour
3/4 cup brown sugar
2 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. salt
1 cup carrots, peeled and shredded
3/4 cup (about 1) apple, peeled and shredded
1/2 cup raisins
1/2 cup coconut
In a small bowl, combine the oil, rice milk, vanilla, and water.  In a medium bowl, combine flour, brown sugar, baking soda, cinnamon, and salt.  Add the wet ingredients to the dry ingredients and stir until just combined.  Stir in the carrots, apples, raisins, and coconut.  Pour into 12 greased muffin cups.  Bake at 350 for 18-22 minutes or until a toothpick comes out clean.
