Oat Banana Bread
2 cups oat flour*
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3 ripe bananas, mashed
1 tbsp. olive or coconut oil
1/3 cup brown sugar or honey
1 tsp. vanilla
2/3 cup chocolate chips
Combine oat flour, baking powder, baking soda, and salt; set aside.  In a separate large bowl, beat together mashed bananas, oil, sugar, and vanilla until smooth and creamy.  Stir in dry ingredients until just combined.  Gently fold in chocolate chips.  Pour batter into a sprayed 9x5 loaf pan.  Bake at 350 for 35-45 minutes or until a knife comes out clean.  Cool completely before turning out of pan and slicing into thick slices.
*To make oat flour, put about 3 cups of oats in a blender or food processor and blend until oats are a powder the consistency of flour.
