Oatmeal Granola Cups
2 1/2 cups oats
1/2 cup crisp rice cereal
1/2 cup honey
1/4 cup brown sugar
1/2 cup oil
1/2 tsp. salt
1/2 tsp. vanilla
3 tbsp. flax seed (optional)
1/2 cup chocolate chips
Mix all ingredients except for chocolate chips really well.  If mixture seems too dry, add a little more oil or honey until the mixture starts to clump.  Stir in chocolate chips.  Press into muffin tins until nice and packed.  Bake at 350 for 12-15 minutes or until golden.  Let set until completely cool.
