Orange Beef Stir Fry
1 lb. trimmed beef, thinly sliced
1 tbsp. oil
1 cup orange juice
1 tsp. corn starch
2 cloves garlic, minced
1 tbsp. minced ginger
1/4 cup green onion (about 5)
1 small bell pepper
hot cooked rice
In a small bowl, combine corn starch and orange juice; set aside. In a large skillet, add beef and oil. Stir fry over high heat until beef is browned, about 1-2 minutes per side. Remove beef and set aside. Add garlic, ginger, onion, and bell pepper to oil remaining in skillet. Stir fry for 2 minutes. Add orange juice mixture; simmer until thickened, about 5 minutes. Add beef and toss with sauce. Serve over rice.
