Pork Pot Stickers
24 wonton wrappers (premade or homemade)
2 cups pulled pork (or other leftover meat), finely chopped
4 cloves garlic
1/4 tsp. salt
pinch pepper
2 scallions, thinly sliced
2 tbsp. cilantro, chopped
2 tbsp. vegetable oil
Dipping sauce of choice (sweet and sour, "soy" sauce, etc.)
In a medium bowl, combine the pork, garlic, salt, pepper, scallions, and cilantro. Working in small batches, spoon about 1 tbsp. of filling in the center of wrappers. Use finger to wet sides of wrapper and fold together to form triangles. Place on a plate and cover with a damp towel until ready to cook.

Heat vegetable oil in a large skillet over medium-high heat. Add pot stickers and cook for about 3 minutes per side until golden brown and crispy. Serve with dipping sauce.
