Protein Bars
Base Layer:
2 cups nuts or seeds (almonds, sunflower, pumpkin, or macadamia)
1/2 cup flax meal or brown rice protein powder
1/2 cup shredded coconut
1/2 cup nut butter (peanut, sunbutter, etc)
1/2 tsp. salt
1/2 cup coconut oil or shortening
2 tbsp. maple syrup
2 tsp. vanilla
Top Layer:
1/2 cup coconut oil
1/2 cup sunbutter or nut butter
1/2 cup sugar
6 tbsp. cocoa powder
3 tbsp. honey
1/2 tsp. vanilla
To Make Base Layer:
Place nuts or seeds, flax meal, coconut, nut butter, and salt in the bowl of a food processor.  Process until ground into a coarse meal.  Add coconut oil, sweeteners, and vanilla and process until well combined to form a thick paste.  Press the mixture into a 9x9 or 11x7 pan.  Place in refrigerator to chill.
To Make Top Layer:
Melt coconut oil and nut butter over a simmer.  Stir in the sugar and cocoa powder and combine thoroughly.  Mix in honey and vanilla and continuously stir until it slightly thickens, then remove from heat.  Pour over the base layer and place back in the refrigerator to chill.  Cut into squares and serve.  Store in fridge.
