Sausage Hash
1 lb. sausage
4 large potatoes, cut into small cubes
salt and pepper
3 eggs, scrambled (if desired)
In a large skillet, brown and crumble sausage.  Remove sausage from pan and set aside.  Add potatoes and season with salt and pepper.  Saute, stirring occasionally, until potatoes are tender.  Stir the sausage back into the mix and add eggs if desired.
