Sausage Zucchini Skillet
1/2 cup quinoa or brown rice
1 lb. sausage
1/4 cup onion, chopped
1/2 cup bell pepper, chopped
4 cups zucchini, chopped
1 cup tomato, diced
1/2 tsp. basil
2 tbsp. cilantro, chopped
2 tbsp. lime juice
salt and pepper to taste
Cook quinoa or rice according to directions.  Cook sausage with onion and peppers.  Stir in zucchini and tomatoes, cook until tender.  Stir in rice or quinoa.  Add basil, cilantro, lime juice, salt, and pepper.
