Sweet Potato Coffee Cake
2 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 cup margarine, softened
1 cup sugar
2 egg replacers
1/4 cup oil
1 tsp. vanilla
1 cup sweet potato puree
1/3 cup dried cranberries

1/4 cup margarine, softened
1/4 cup flour
1/4 cup sugar
1/3 tsp. cinnamon
1/3 tsp. ginger
1/4 tsp. cardamom
1/4 tsp. vanilla
In a medium bowl, mix together all streusel ingredients on low speed until moist, sandy crumbs are formed.  Set aside.  In another medium bowl, whisk together flour, baking powder, baking soda, and salt.  In a large bowl, cream together margarine and sugar until light and fluffy.  Add egg replacers, then vegetable oil and vanilla.  Mix in the sweet potatoes.  Gradually stir dry mixture into wet mixture until just combined.  Stir in dried cranberries.  Pour into greased 9x9 pan.  Top batter with streusel mixture.  Bake at 350 for 30-35 minutes or until toothpick comes out clean.
