Tilapia with Green Salsa
For Fish:
1 lb. tilapia
4 tbsp. apricot preserves, melted and cooled, divided
1 tsp. old bay or other seafood seasoning
salt and pepper to taste

For Salsa:
1 cup bell pepper, chopped
1 jalapeno, seeded and diced
1/3 cup cucumber, diced
1/4 cup green onions, sliced
1/2 cup pineapple, diced
1/3 cup cilantro, chopped
1 tbsp. lemon juice
1 tbsp. olive oil
1 large avocado, halved, pitted, and diced
1/2 tsp. salt
1/2 tsp. cumin
To prepare salsa, combine all ingredients gently in a bowl.  Refrigerate until ready to use.  To prepare the fish: Place tilapia on baking pan.  Brush with 2 tbsp. of melted preserves.  Season with salt, pepper, and seafood seasoning.  Broil on high for 5-6 minutes or until it flakes easily.  Brush with remaining reserves and top with salsa.
