Vanilla Granola
2 1/2 cups oats
1/2 cup cranberries
1/4 cup flax seed
1/2 cup shredded coconut
2 tbsp. chia seeds
2 tsp. vanilla
1/3 cup maple syrup
1/2 cup coconut oil
1/2 tsp. salt
Mix all the dry ingredients in a large bowl.  Mix all the wet ingredients in another smaller bowl.  Add wet to dry and mix until combined.  Spread mixture onto a lined baking sheet.  Bake at 350 for 15 minutes, then shake the granola on the tray and bake for another 10-15 minutes.  Store in an airtight container.
