Zucchini Muffins IV
6 eggs
2 tsp. vanilla
1/2 tsp. baking soda
3/4 tsp. salt
3/4 tsp. cinnamon
1/4 tsp. nutmeg
dash ginger
dash cloves
1/2 cup coconut oil, melted
1/2 cup honey
3/4 cup coconut flour
2 cups shredded zucchini
1/2 cup raisins
Combine eggs, vanilla, salt, cinnamon, nutmeg, ginger, and cloves in a large bowl.  Add coconut oil and honey and blend until well-combined.  Stir in coconut flour, zucchini, and raisins until well mixed.  Line a muffin tin with liners.  Bake at 325 for 35-45 minutes or until a toothpick comes out clean.
